Hot milk cake is one of those old-fashioned recipes that deserves way more attention than it gets — sturdy enough to layer, light enough to melt in your mouth, and made from ingredients you probably already have on hand.

It’s always difficult to describe how something tastes, or what the texture is as you munch on a slice, but imagine a denser pudding cake, one that doesn’t crumble apart in your mouth, but feels like a true, sweet sponge cake.

But here’s the thing: At altitude, this cake needs a little help. It gets much of its structure from air whipped into the eggs and sugar, and up here that air expands faster and more dramatically in the oven — which means a recipe written for sea level can rise beautifully and then collapse right in the middle.

This version has been tested at altitude, with the flour, baking powder, sugar, and egg count all adjusted from the regular recipe to keep that structure stable through the bake. Why This High-Altitude Hot Milk Cake Works

Just like the regular version, this cake depends on whipped air in the egg-and-sugar mixture for its structure — so following the leavening amount exactly matters even more here than at sea level. Here’s what changed from the regular-altitude version, and why:

  • An extra egg (4 instead of 3) — adds structure to compensate for the reduced baking powder below, since the whipped egg foam has to carry more of the load. The extra egg also increases the liquid, to compensate for the additional liquid that bakes off at high-altitude.
  • Less baking powder (1 1/4 tsp instead of 2 1/4 tsp) — at altitude, lower air pressure lets any leavening expand more aggressively, so the regular amount would over-inflate the batter before the structure sets.
  • Less sugar (4 tablespoons less) — sugar weakens gluten and egg-foam structure; less helps the cake set before it over-expands.
  • A little more flour (2 tablespoons) — altitude air is drier, and this helps keep the crumb from turning dry or coarse.
  • A hotter oven, shorter bake (365°F for 22 minutes instead of 350°F for 30) — setting the structure faster keeps it from over-expanding and collapsing.

Milk stays the same as the regular version — the extra egg and flour did enough of the work here without needing more liquid.

Ingredients

  • 2 1/4 Cups All-Purpose Flour PLUS 2 Tablespoons
  • 2 tsp Instant Clear Gel Optional
  • 4 lg Eggs
  • 1 1/4 Cups Milk
  • 5 tbsp Butter cubed
  • 1/4 Cup Vegetable Oil
  • 2 Cups Sugar LESS 4 Tablespoons
  • 1 tsp Vanilla
  • 2 tsp Cardamom
  • 1 1/4 tsp Baking Powder double-acting
  • Salt pinch

Instructions

  • Prepare baking pans. Grease and flour 1 13" X 9" pan or 2 8" rounds. You can place a parchment round on the bottom, if necessary
  • In a medium bowl, whisk together flour, Instant Clear Gel, cardamom, salt and baking powder. Set aside.
  • Preheat oven to 365° F
  • In a small saucepan, heat the milk and butter just to a steamy simmer. Remove from heat, stir to melt the butter, cover with lid and drape with a dishtowel to keep warm.
  • In a mixing bowl, beat eggs and sugar on high speed for about 3 minutes, or until the eggs are a light lemon-color and thick.
  • Add the oil, beating on low just to combine.
  • Add vanilla, then gradually add flour mixture, beating on low to combine until smooth.
  • Gradually add the hot milk/butter mixture and beat on low to combine.
  • Pour into prepared pan(s). Tap lightly to disperse just the biggest bubbles. Bake at 365°F for 22 minutes, or until a toothpick comes out clean.
  • Cool in pans for 10 minutes and tap out to cool completely on a cooling rack.

Tips for Success at Altitude

  • Don’t skip or shortcut the leavening amount — with less baking powder doing the work, the extra egg and precise measuring matter more than usual.
  • Watch the bake with a toothpick rather than the clock alone — ovens vary, and 22 minutes at 365°F leaves less margin for error than the longer, lower-temp regular bake.
  • Instant Clear Gel is optional here (same as the regular version) — nice for extra stability if you have it, but the tested recipe works without it too.

Why can’t I just use the regular-altitude version of this recipe?
