Review: Cherrybrook Kitchen Gluten-Free Chocolate Cake Mix

The search for the best gluten free cake mix continues.

Cherrybrook Kitchen is distributed by Target Stores in the U.S.  For a gluten-free mix, the price was very low.  It makes one 9-inch round layer, so for two, you would need two boxes.  But read the review before you purchase – you may want to reach for something else.



Cherrybrook Kitchen’s Chocolate Cake Mix bills itself as Gluten-free, Wheat-free, peanut free, dairy free, nut free and egg free.  Checking the ingredients, this appears to be accurate:

2015-01-25 10.26.51Ingredients: Potato starch, cane sugar, natural cocoa powder, white rice flour, tapioca starch, granulated brown sugar, baking soda, xanthan gum, sea salt.  In addition, the instructions call for 1/2 cup vegetable oil, water and 2 teaspoons of vanilla.

Mixing the cake was very much like a typical cake mix, minus the eggs.  The batter was thin and pourable, with a strong chocolate aroma.  I used a 9-inch round anodized pan for baking at 350 for 25 minutes.  The cake did not come out clean at that time, so I added another 5 minutes.  Even after that, the cake was still a bit undone in the middle, but I removed it anyway to avoid drying it out.

2015-01-25 11.14.10The cake has an extremely dark appearance – almost black.  The aroma is fudgy.  Cutting in to the cake revealed a very crumbly texture (without egg as binder, this is typical).  The crumb appears fine, however the texture of the cake is extremely gummy – probably the worst I’ve ever tried.  Even with the strong chocolate taste, the gummy texture makes the cake almost inedible.

For the price, you may be tempted to try one of these mixes.  But I found them to be completely unacceptable.
